Omlette Vegetable Rolls Recipe

Ingredients
  • 3 spring onions, thinly sliced .
  • 1 tsp gingerroot, peeled & grated .
  • 100 g fresh bean sprouts .
  • 1 tsp sunflower oil .
  • 3 eggs .
  • 120 g fresh shiitake mushrooms .
  • 1 garlic clove, grated .
  • 1 tbsp sunflower oil .
  • 3 tbsps soy sauce .
  • 1 carrot, shredded

Directions
  • Step #1 Remove the stems from the mushrooms & slice finely.
  • Step #2 Heat the tbsp oil & fry the carrot & mushroom for 2 mins.
  • Step #3 Add ginger, garlic, onion & beansprouts & cook for another 2 mins.
  • Step #4 Spice up with the soy & set aside.
  • Step #5 Beat together the eggs with the 1 tsp oil.
  • Step #6 Heat a medium frying pan & add a little egg (enough to just cover the bottom).
  • Step #7 Swirl in the pan & then flip when the edges become golden.
  • Step #8 Remove from pan & repeat until you have 6 pancakes.
  • Step #9 Cut each pancake in half.
  • Step #10 In the centre of the half moon place a spoonful of vegetable filling.
  • Step #11 Roll up so filling is secure, tucking the edges in as you go, repeat for the rest of the pancakes.
  • Step #12 Steam the rolls briefly to warm up (or microwave briefly) & serve.
