Spaghetti Pie Recipe

Ingredients
  • 1/2 c sliced onions .
  • 2/3 c ricotta cheese .
  • Crust .
  • 2 tsps margarine .
  • 1 tbsp margarine, softened .
  • 1/2 c sliced green peppers .
  • 2 tsps tomato paste .
  • 1 c canned sliced tomatoes, reserve liquid .
  • 2 c cooked spaghetti .
  • 2 oz shredded mozzarella cheese .
  • 1 tsp margarine, softened .
  • 1 garlic clove, minced .
  • Filling .
  • 6 oz cooked ground beef, crumbled .
  • 1 egg, beaten .
  • 1 oz grated parmesan cheese

Directions
  • Step #1 Prepare crust: In medium bowl, mix all ingredients.
  • Step #2 Spray a 9 inch glass pie plate with nonstick cooking spray; spread spaghetti mixture over bottom & up sides of pie plate to form a crust.
  • Step #3 Prepare filling: Preheat oven to 350 degrees.
  • Step #4 Carefully spread ricotta cheese over bottom of crust & set aside.
  • Step #5 Heat margarine in a skillet until bubbly & hot; add onion, bell pepper & garlic & saute until onion is translucent.
  • Step #6 Add beef, reserved liquid, until mixture is slightly thickened & throughly heated; spoon beef mixture over ricotta cheese & bake this until pie is thoroughly heated, stirring constantly, tomatoes, & tomato paste & cook, about 20 to 25 mins.
  • Step #7 Sprinkle top pie with mozzarella cheese & bake this until cheese is melted & just begins to brown, about 5 mins; remove this from oven & let this stand for 5 mins before cutting.
