Cabbage Rolls
Stuffed Grape Leaves No Meat Dolma
Ingredients
1 (16 oz) jar grape leaves, drained & rinsed
3 c uncooked white rice
1 lb ground beef
1/4 tsp curry powder (optional)
1 potato, sliced into rounds
1/2 tsp ground allspice
1 c canned tomato sauce
2 c water, or as needed
1 tsp minced fresh parsley
2 tbsps vegetable oil
1/2 tsp ground black pepper
Directions
Step #1 In a medium bowl, mix together the uncooked rice, parsley, allspice, ground beef, pepper & curry powder until well mixed.
Step #2 Pour oil into the bottom of a large pot, & spread to cover.
Step #3 Make a layer of potato slices to cover the bottom of the pan.
Step #4 The dolmas should not be able to touch the bottom of the pan.
Step #5 Lay the grape leaves out flat on a cutting board.
Step #6 Place about a tbsp of the beef mixture in the center of one leaf.
Step #7 Fold sides in towards the center, then roll up from the bottom loosely.
Step #8 Set in the pot seam side down.
Step #9 Repeat with the remaining mixture & leaves.
Step #10 For large leaves, you may cut them in half at the center vein.
Step #11 Place a heavy dinner plate on top of the dolma to keep them from unraveling.
Step #12 The cooking pot should be about 2/3 full.
Step #13 Pour tomato sauce & water over the dolma.
Step #14 The liquid should cover them by at least one inch.
Step #15 Adjust the amount of water if necessary.
Step #16 Bring to a boil, & let simmer for 45 mins to 1 hr, then cover, until all liquid has been absorbed & rice is tender.
