Easy Mashed Potato Casserole Recipe

Ingredients
  • 1 (7 1/4 oz) box betty crocker instant roasted garlic mashed potatoes (2 pouches) .
  • 3 c hot water .
  • 1 c half-and-half cream (may sub in whole milk) .
  • 1 c sliced green onions .
  • 1 c bell peppers, sliced .
  • 2 tsps butter .
  • 1 1/2 c shredded cheddar cheese .
  • 1/4 c butter or margarine (1/2 stick)

Directions
  • Step #1 Heat oven to 350°F Spray 2-quart casserole dish with cooking spray.
  • Step #2 In a nonstick skillet, melt 2 tsps butter over medium-high heat.
  • Step #3 Cook onions & bell pepper in butter 1 min, stirring every once in awhile.
  • Step #4 Remove from heat; set aside.
  • Step #5 In 2-quart saucepan, heat water, half-and-half & 1/4 c butter to boiling; remove this from heat.
  • Step #6 Stir in both pouches of potatoes (and seasoning) just until moistened.
  • Step #7 Let stand about 1 min or until liquid is absorbed.
  • Step #8 Beat with fork until smooth.
  • Step #9 Spoon 1 1/3 c of the potatoes into casserole; top this with half of the onion mixture & 3/4 c of the cheese.
  • Step #10 Spoon another 1 1/3 c potatoes over cheese; carefully spread to cover.
  • Step #11 Sprinkle top evenly with remaining onion mixture.
  • Step #12 Top with remaining potatoes; carefully spread to cover.
  • Step #13 Sprinkle top with remaining 3/4 c cheese.
  • Step #14 Bake uncovered about 30 mins or until hot.
