Firecracker Smashed Potatoes Recipe

Ingredients
  • 2 tbsps sliced chipotle peppers .
  • 1 tsp olive oil .
  • 8 oz light cheddar cheese, grated .
  • 1 tbsp sliced jalapeno peppers, garnish .
  • 3 lbs potatoes, scrubbed .
  • 1/8 tsp kosher salt .
  • 1 head garlic, top trimmed

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Put garlic head on large square of aluminum foil wrap & drizzle with oil.
  • Step #3 Gather foil wrap around garlic, twisting top to close tightly.
  • Step #4 Bake 60 mins or until pulp is golden & very soft.
  • Step #5 When cool enough to handle, break apart cloves & squeeze pulp from each into a small bowl; mash to puree with fork.
  • Step #6 In large pot of boiling, cook potatoes until tender, salted water, about 20 min Drain well & return to pot.
  • Step #7 Add cheddar cheese, chiptole peppers & garlic puree.
  • Step #8 Mash to mix, leaving potatoes very chunky.
  • Step #9 Garnish with jalepeno peppers.
