1 c peach jam, the kind that has fruit pieces in it .
1 c ricotta cheese .
8 flour tortillas .
2 c canola oil .
1/3 c raw sugar .
2 tbsps cinnamon .
1-2 c melted chocolate
Directions
Step #1 Heat oil, moderately hot, about 190c.
Step #2 Roll up tortillas loosely & fasten with a wooden toothpick to create a shell, form so hollow in centre (like a brandy snap) then fry a few at a time until they are golden brown.
Step #3 Mix cinnamon & sugar.
Step #4 Mix together ricotta & jam.
Step #5 While shells are still warm roll in cinnamon sugar , holding one of the ends, dip in melted chocolate & roll in finely sliced nut pieces.
Step #6 Fill the cannolis with the ricotta jam mixture.
Step #7 These are best filled with a pastry bag.
Step #8 But a table knife, heaped with mixture & slid in will work.
Step #9 Dip & roll the other end in chocolate & nuts.
