Upside-down Pear Cake Recipe

Ingredients
  • 1 c sugar .
  • 1 tsp vanilla extract .
  • 5 pecan halves .
  • 1 tsp ground cinnamon .
  • 1/3 c firmly packed brown sugar .
  • 2 large eggs .
  • 2 c sliced fresh pears .
  • 4 maraschino cherries .
  • 1/2 c sour cream .
  • 3/4 c butter, softened & divided .
  • 2 c self-rising flour .
  • 1/2 c milk

Directions
  • Step #1 Grease the bottom & sides of a 9-inch springform pan with 3 tbsps butter.
  • Step #2 Sprinkle top evenly with brown sugar; arrange pear slices in a pinwheel pattern on brown sugar.
  • Step #3 Place maraschino cherries & pecan halves in center of pinwheel.
  • Step #4 Beat remaining ½ c plus 1 tbsps butter at medium speed using an electric mixer until fluffy; slowly add in sugar, beating well.
  • Step #5 Add eggs, 1 at a time, beating until mixed after each addition.
  • Step #6 Add in sour cream, beating until smooth.
  • Step #7 Add in flour & the next 3 ingredients, beating until batter is smooth.
  • Step #8 Spoon batter evenly over arranged pears.
  • Step #9 Bake in a 350° oven for 45-50 mins or until a pick comes out clean.
  • Step #10 Cool in pan 15 mins; remove side of pan; invert onto a serving plate, & remove bottom of pan.
