Ingredients
  • 1 tsp minced garlic .
  • 4 c cooked rice .
  • 1/2 c chicken broth .
  • 1/2 tsp salt .
  • 2 tsps curry powder .
  • 1 tbsp minced fresh ginger .
  • 1 tbsp minced jalapeno peppers .
  • 1/4 tsp ground pepper .
  • 3/4 c sliced onions .
  • 3/4 c frozen baby peas .
  • 1 lb ground beef

Directions
  • Step #1 Heat large skillet over medium-high heat.
  • Step #2 Add beef & cook, stirring until browned, about 5 mins.
  • Step #3 Add next 7 ingredients.
  • Step #4 Reduce heat to medium & cook, until onions are translucent, stirring, 3 mins.
  • Step #5 Add broth & peas; cook this until broth is reduced & peas are are hot; 2 mins.
  • Step #6 Serve with rice & condiments: chutney, sliced peanuts sliced fresh cilantro & sour cream.
  • Step #7 We keep minced ginger in a small container in the freezer compartment & make chicken broth from the bones whenever we have chicken & keep a bottle of chutney around just for this dish.
  • Step #8 One small jalapeno is sufficient if not generous for the amount (remember to use gloves).
  • Step #9 Warning; this dish is too small for our family of eaters.
  • Step #10 We double it & have extra food the next day.
