Beef Stroganoff Recipe

Ingredients
  • 2 tbsps olive oil .
  • 1/2 c beef bouillon .
  • 4 tbsps butter .
  • 1/2 c Burgundy wine .
  • 1 tsp salt .
  • 1/2 tsp paprika .
  • 1/4 tsp fresh ground pepper .
  • 1 tsp lemon rind .
  • 1-1 1/2 lb sirloin steaks, cut 1/2-inch thick .
  • 1/2 c onions, sliced .
  • 1/2 lb fresh mushrooms, sliced .
  • 1 garlic clove, pressed .
  • 1 tsp chervil .
  • 1 c sour cream .
  • 3 tbsps flour

Directions
  • Step #1 Mix flour, salt & pepper.
  • Step #2 Slice steak into 2" strips & dredge in seasoned flour.
  • Step #3 Heat oil & 2 tbsp of butter in fry pan until piping hot.
  • Step #4 Add steak & cook, stirring constantly, until lightly browned.
  • Step #5 Do not overcook, as steak should be RARE.
  • Step #6 Remove from frypan & reduce heat to low.
  • Step #7 Add remaining butter to frypan, then add onion, garlic & mushrooms.
  • Step #8 Cook, stirring constantly, for 3 mins, or until onion & mushromms are tender but not brown.
  • Step #9 Return steak to frypan.
  • Step #10 Add burgundy, chervil, bouillion, lemon rind & paprika & mix well.
  • Step #11 Sason with extra salt & pepper if needed.
  • Step #12 Simmer for 5 mins, or until most of the liquid has evaporated.
  • Step #13 Stir in sourcream & heat through, but DO NOT BOIL.
  • Step #14 Remove from heat & keep warm.
  • Step #15 Serve over pasta or inside rice border.
