Ingredients
1 small onion, sliced very finely .
4 large tomatoes .
salt .
2 tbsps fresh basil, sliced .
pepper .
10 oz white mushrooms, sliced very finely .
1 tbsp fresh parsley, sliced .
1 tbsp parmesan cheese, freshly grated .
4 tsps olive oil .
1 c vegetable stock or broth .
2 garlic cloves, finely sliced
Directions
Step #1 Preheat oven to 350 degrees.
Step #2 Slice a "lid" from the top of each tomato & set aside.
Step #3 Using a tsp, carefully scoop out the flesh from the tomato shells & chop the flesh.
Step #4 Place tomato flesh in a small bowl & add 1 tsp of the sliced fresh basil.
Step #5 Invert tomato shells on paper towels & drain.
Step #6 Heat 3 tsp of the olive oil in a skillet.
Step #7 Add the mushrooms, parlsey & remaining basil, garlic, onion, then season to taste with pepper.
Step #8 cover & cook over low heat/flame for 2 mins, stirring every once in awhile, then remove the lid & cook, for an extra 8-10 mins.
Step #9 Meanwhile, bring the stock to a boil & cook this until reduced by three-quarters.
Step #10 Stir in the tomato mixture & cook for an extra 3-4 mins, or until thickened.
Step #11 Press the mixture through a strainer with a wooden spoon & stir it into the mushroom mixture.
Step #12 Stir in the parmesan cheese.
Step #13 Stand the tomatoes, right way up, in an ovenproof dish & season the insides with salt.
Step #14 Divide the filling mixture & fill each tomato with filling, replacing the "lids" when full.
Step #15 Brush with remaining olive oil & bake in the preheated oven for 15 mins or until tender & cooked through.
Step #16 Serve warm.
