Easy Chicken Mole Recipe

Ingredients
  • 1 (8 1/4 oz) jar mole (I use the brand "Rogelio Bueno", Autentico Mole Sauce) .
  • 10-12 boneless skinless chicken thighs .
  • 1-2 jalapeno (Seeded & Deveined)

Directions
  • Step #1 In a heavy sauce pan boil the chicken thighs, no need to salt the water but you may if you desire.
  • Step #2 Don’t discard the cooking water you will use it later.
  • Step #3 In a mixer mix the premade Mole sauce & jalapenos.
  • Step #4 Using the jar the Mole came in add 3 jarfuls of the cooking water you used to cook the chicken.
  • Step #5 Blend until smooth & you don’t see chunks of jalapenos.
  • Step #6 (Note: before mixing you may want to wait for the water to cool down for a few mins the heat of the water may make your mixer top fly off spraying mole sauce everywhere.
  • Step #7 Experience talks--trust me.
  • Step #8 ).
  • Step #9 Discard the unused water, leaving the chicken in the pot, once you have mixed the mole sauce add it to the chicken & stir heating it through.
