Double Chocolate Pie Recipe

Ingredients
  • 1 1/2 c white sugar
  • 3 c milk
  • 2 (1 oz) squares unsweetened chocolate, sliced
  • 1 tbsp vanilla extract
  • 1/3 c cornstarch
  • 4 egg yolks, beaten
  • 3/4 c semisweet chocolate chips
  • 1 (9 inch) pie crust, baked
  • 1/2 tsp salt

Directions
  • Step #1 Combine sugar, cornstarch, & salt in a 2-quart saucepan.
  • Step #2 Stir in milk slowly.
  • Step #3 Add chocolate chips & unsweetened chocolate.
  • Step #4 Place over med-heat/flame, stirring constantly, until mixture thickens & boils.
  • Step #5 Boil & stir 1 min.
  • Step #6 Place egg yolks in a medium heatproof bowl.
  • Step #7 Gradually pour half of chocolate mixture into egg yolks, whisking constantly.
  • Step #8 Whisk egg yolk mixture back into mixture in saucepan.
  • Step #9 Place over med-heat/flame & bring back to a boil, stirring constantly.
  • Step #10 Boil & stir 1 min.
  • Step #11 Remove from heat; stir in the vanilla extract.
  • Step #12 Pour mixture into baked pie shell.
  • Step #13 Press a layer of plastic wrap onto filling.
  • Step #14 Refrigerate at least 4 hrs but no longer than 48 hrs.
  • Step #15 Remove plastic wrap before serving & top this with whipped topping.
