Double Corn Polenta Recipe

Ingredients
  • 1/4 c parmesan cheese, grated .
  • 1 tsp salt .
  • 1/4 c butter, melted .
  • sour cream, for serving .
  • 2 eggs .
  • 1/2 c cornmeal .
  • 1 tbsp sugar .
  • 1 c sour cream .
  • 10 oz frozen corn, thawed & drained .
  • salsa, for serving .
  • 1 c cheddar cheese, grated .
  • 4 oz sliced green chilies, drained

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray a 7-1/2" by 11-3/4" pan or 2 quart casserole with cooking spray.
  • Step #3 Break the eggs into a medium bowl & beat lightly.
  • Step #4 Add the remaining ingredients except parmesan & mix well.
  • Step #5 Pour into prepared pan & place this in oven.
  • Step #6 Bake until firm, about 40 mins.
  • Step #7 sprinkle with parmesan cheese & bake for 5 more mins or until cheese melts.
  • Step #8 Serve with salsa & sour cream.
