Fruited Rice Recipe

Ingredients
  • 1/4 c dried sweetened cranberries, sliced .
  • 1 tbsp dried parsley flakes .
  • 1/2 tsp dried thyme .
  • 1/4-1/2 c orange juice .
  • 2 tsps chicken bouillon granules .
  • 1/4 c dark raisins .
  • 1/4 tsp black pepper .
  • 1 tbsp unsalted butter .
  • 2 tsps brown sugar, packed .
  • 1/4 c dried apricots, sliced .
  • 1/2 c brown rice, uncooked .
  • 2 tbsps dried onion flakes .
  • 1/8 tsp ground red pepper .
  • 1/2 c wild rice, uncooked .
  • 2 1/4 c water

Directions
  • Step #1 In large saucepan, butter, bouillon granules, sugar, brown rice, mix water, onion, parsley, wild rice, thyme & both peppers.
  • Step #2 Bring to boil over high heat, then reduce heat to low.
  • Step #3 Cover up & simmer 45-50 mins, or until rice is ALMOST tender.
  • Step #4 Stir in orange juice, apricots, cranberries & raisins.
  • Step #5 Simmer, uncovered, 15 mins or until rice is tender.
