Ingredients
1/4 tsp baking soda .
3/4 tsp salt .
1 c yellow cornmeal .
3/4 c corn .
8 tbsps unsalted butter, melted & cooled slightly (1 stick) .
2 large eggs .
1 c buttermilk .
1 1/2 c all-purpose flour .
2 tsps baking powder .
1/4 c brown sugar, packed
Directions
Step #1 Adjust oven rack to middle position.
Step #2 Preheat oven to 400F degrees Fahrenheit.
Step #3 Spray 8-inch-square baking dish with nonstick cooking spray.
Step #4 Whisk flour, baking soda, baking powder, cornmeal, & salt in medium bowl until mixd; set aside.
Step #5 In food processor/blender or mixer, process brown sugar, corn kernels, & buttermilk until mixd, about 5 seconds.
Step #6 Add eggs & process until well mixd (corn lumps will remain), about 5 seconds longer.
Step #7 Using rubber spatula, make a well in the center of the dry ingredients.
Step #8 Pour wet ingredients into well.
Step #9 Begin folding dry ingredients into wet, giving mixture only a few turns to barely mix.
Step #10 Add melted butter & continue folding until dry ingredients are just moistened.
Step #11 Pour batter into prepared baking dish; smooth surface with rubber spatula.
Step #12 Bake until deep golden brown & toothpick inserted in center comes out clean, 25 to 35 mins.
Step #13 Cool on wire rack rack 10 mins.
Step #14 Best served warm; leftovers can be wrapped in foil wrap & reheated in a 350 degree Fahrenheit oven for 10 to 15 mins.
