Ingredients
1 tsp salt
1/2 c fat-free milk
1 (.25 oz) package active dry yeast
1 egg white, lightly beaten
1/8 tsp baking soda
1/4 c water
1/4 c packed brown sugar
2 3/4 c all-purpose flour
1/2 c fat-free plain yogurt
1/4 tsp vanilla extract
1 tbsp ground cinnamon
1/2 c confectioners' sugar
3 tbsps butter or stick margarine, divided
ICING:
2 tsps fat free milk
3/4 c sliced pecans, toasted
1/2 c sugar, divided
Directions
Step #1 In a mixing bowl, yeast, mix 1 c flour, 1/4 c sugar, salt & baking soda.
Step #2 In a saucepan, milk, heat the yogurt, water & 2 tbsps butter to 120 degrees F-130 degrees F.
Step #3 Add to dry ingredients; beat on medium speed for 2 mins.
Step #4 Stir in enough remaining flour to form soft dough.
Step #5 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
Step #6 Transfer to a bowl coated with nonstick cooking spray; turn once to grease top.
Step #7 Cover & let rise in a warm place until doubled, about 1 hr.
Step #8 Punch dough down.
Step #9 Roll into a 14-in.
Step #10 x 10-in.
Step #11 rectangle.
Step #12 Melt remaining butter; brush over dough.
Step #13 Combine pecans, brown sugar, cinnamon & remaining sugar; sprinkle evenly over dough to within 1/2 in.
Step #14 of edges.
Step #15 Roll up jelly-roll style, starting with a long side; pinch seam.
Step #16 Line a baking sheet with foil; coat well with nonstick cooking spray.
Step #17 Place dough seam side down on prepared pan; pinch ends together to form a ring.
Step #18 With scissors, cut from the outside edge two-thirds of the way toward center of ring at 1-in.
Step #19 intervals.
Step #20 Separate strips slightly & twist.
Step #21 Cover & let rise until doubled, about 45 mins.
Step #22 Brush with egg white.
Step #23 Bake at 350 degrees F for 20-25 mins or until golden brown.
Step #24 Immediately remove this from pan to wire rack.
Step #25 Combine icing ingredients; drizzle over warm ring.
