Quick Chicken Risotto Recipe

Ingredients
  • 1 c white rice, uncooked .
  • 4 oz Canadian bacon, cut up .
  • 8 oz boneless skinless chicken breast halves, cut into 1/2-inch pieces .
  • 1/2 lb asparagus, cut into 1-1/2-inch pieces .
  • 1 (14 1/2 oz) can chicken broth .
  • salt & pepper, to taste .
  • 1/4 c parmesan cheese, grated .
  • 1/4 tsp dried basil leaves or 1 tsp fresh basil

Directions
  • Step #1 Spray 12" nonstick skillet with cooking spray; heat over medium-high heat.
  • Step #2 Cook chicken in skillet 3 to 5 mins, stirring frequently,until light brown.
  • Step #3 Stir in broth; heat to boiling.
  • Step #4 Stir in rice; reduce heat.
  • Step #5 Cover up & let simmer without stirring 10 mins.
  • Step #6 Stir in asparagus,Canadian Bacon & basil.
  • Step #7 Cover up & let simmer without stirring 8-10 mins or until rice is tender & chicken is no longer pink in the center.
  • Step #8 Remove from the heat.
  • Step #9 Stir in cheese.
  • Step #10 Spice up with salt & pepper to taste.
  • Step #11 Serve.
