Ingredients
  • 2 tsps vanilla extract
  • 1 c shredded coconut
  • 2 (9 inch) pie shells, partially baked
  • 1 c white sugar
  • 1 1/2 c raisins
  • 2 tsps ground cinnamon
  • 6 eggs
  • 1 c sliced walnuts
  • 1 c butter, softened
  • 1 c packed brown sugar

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Place raisins in a small saucepan.
  • Step #3 Pour in enough water to cover.
  • Step #4 Place over low heat/flame & bring to a boil.
  • Step #5 Remove from heat & set aside.
  • Step #6 In a large mixing bowl, white sugar, cream together butter, & brown sugar.
  • Step #7 Beat in eggs, vanilla extract, & cinnamon.
  • Step #8 Mix until smooth.
  • Step #9 Drain excess water from raisins.
  • Step #10 Fold into mixture along with nuts & coconut.
  • Step #11 Mixture will appear curdled.
  • Step #12 Pour half of mixture into each pastry shell.
  • Step #13 Bake in preheated oven for 30 to 35 mins, until filling is set.
  • Step #14 Cool on wire racks.
  • Step #15 Garnish with whipped topping & sliced nuts if desired.
