90 Minute Dinner Rolls
Ingredients
1/4 c unbleached white flour .
1/2 c soy powder (optional) .
1 egg substitute (Ener-G) .
4 tbsps raw sugar .
1 c spelt flour .
1/4 c vegan margarine (Earth Balance) .
1 tbsp sea salt (Celtic) .
1 1/2 c warm water (filtered) .
4-5 c spelt flour .
2 1/4 tsps dry yeast (Red Star)
Directions
Step #1 Add the warm water to your mixing bowl & stir in the the sugar until most of it is dissolved.
Step #2 Gently stir in the the yeast.
Step #3 Wait 5 mins for the yeast to become active.
Step #4 You should see some yeast & bubble floating to the top.
Step #5 Mix in the c of spelt flour.
Step #6 Add the egg replacer & melted Earth Balance Buttery Spread.
Step #7 At this point & mix thoroughly.
Step #8 I used the paddle on my mix master & that did a great job mixing the ingredients.
Step #9 Stir in the salt & optional soya milk powder.
Step #10 Slowly mix in the rest of the spelt & unbleached flours.
Step #11 When it forms a ball that just barely sticks to the bowl, then it is time to start kneading.
Step #12 Either turn it out onto a floured board or switch to a dough hook in your mixer, & knead for 6 mins.
Step #13 Let it rest for a few mins while you oil the rising bowl, then knead for 6 more mins.
Step #14 Put the dough ball in the rising bowl & roll it around so that it is coated with the oil.
Step #15 Cover up the bowl with a damp towel or plastic wrap, & let rise for about 2 hrs or until doubled.
Step #16 Punch down the dough & carefully knead out any large bubbles.
Step #17 Cover up & let rise for about half as long as the first time.
Step #18 Oil your cake pan.
Step #19 Pull off pieces of dough a little bigger than a golf ball & roll them in your hand to form round top.
Step #20 Place them side by side in your pan.
Step #21 I tend to make 4 rows of 4 rolls in an 8x8 pan & 5 rows of 5 slightly smaller rolls in a 9x9 pan.
Step #22 Cover up & let rise for an hr.
Step #23 Preheat your oven to 375°F Bake for 26 to 30 mins.
