Ingredients
  • 1/2 c shortening
  • FILLING:
  • PASTRY:
  • 1/2 tsp salt
  • 1/4 tsp almond extract
  • 3 tbsps quick-cooking tapioca
  • 1/4 tsp salt
  • red food coloring
  • 2 (16 oz) cans tart cherries
  • 1/4 c ice water
  • 1 tbsp butter or margarine
  • 1 1/2 c all-purpose flour
  • 1 c sugar

Directions
  • Step #1 In a bowl, mix flour & salt; cut in shortening until crumbly.
  • Step #2 Gradually add water.
  • Step #3 Tossing with a fork until dough forms a ball.
  • Step #4 Divide dough in half.
  • Step #5 Roll out one half to fit a 9-in.
  • Step #6 pie plate for bottom crust.
  • Step #7 Drain cherries, reserving 1/4 c juice.
  • Step #8 Mix cherries, extract, juice, sugar, tapioca, salt & food coloring if desired; pour this into the crust.
  • Step #9 Dot with butter.
  • Step #10 Top with a lattice crust.
  • Step #11 Bake at 375 degrees F for 55-60 mins.
