Nutmeg Cake Recipe

Ingredients
  • 2 c lightly packed brown sugar .
  • 1 egg .
  • 1 c milk .
  • 1/2 c unsalted butter .
  • 2 tsps ground cinnamon or cassia .
  • 1 tsp ground allspice .
  • 1 tsp coriander powder .
  • 2 c self-rising flour .
  • 2 tsps ground nutmeg

Directions
  • Step #1 Preheat oven to 350 & butter sides of an 8-inch round cake pan.
  • Step #2 Line the base with greased parchment paper.
  • Step #3 Set aside.
  • Step #4 Mix together flour, & coriander, brown sugar, allspice, cinnamon, then rub the butter into the mixture until it resembles coarse bread crumbs.
  • Step #5 Spoon half of this mixture over the base of the prepared pan.
  • Step #6 Whisk the egg & nutmeg into the milk, then add to the remaining flour mixture to make a very runny batter.
  • Step #7 Stir thoroughly.
  • Step #8 Pour the batter over the crumbs in the pan.
  • Step #9 Bake for 70 mins, or until golden brown & springy to touch in the center.
  • Step #10 Cool in the tin for a few mins, then turn out & cool thoroughly on a wire rack.
  • Step #11 *Note: If you can't find self-rising flour, substitute an equal amount of all-purpose flour & add 1 tbsp baking powder & 1 tsp salt.
