Mashed Pumpkin Recipe

Ingredients
  • 2 c calabaza squash or butternut squash (sliced 1 inch pieces) .
  • 2 garlic cloves (minced) .
  • 1 small onion (sliced) .
  • 1 tbsp vegetable oil .
  • salt (to taste) (optional) .
  • 1/4 tsp cumin seeds

Directions
  • Step #1 Heat oil in a saucepan & fry onions until translucent.
  • Step #2 Add garlic & fry until light golden brown.
  • Step #3 Add cumin seeds & fry until they begin to pop & release their aroma.
  • Step #4 (About 30 seconds).
  • Step #5 Mix in the pumpkin & saute for 1-2 mins.
  • Step #6 Add 1/4 c water.
  • Step #7 Cover up & lower heat to med low.
  • Step #8 Cook for about 10 mins or until tender.
  • Step #9 Remove lid & mash pumpkin with fork or potato smasher thingy:-)until smooth.
  • Step #10 Add salt if using.
  • Step #11 If water is not yet absorbed, cover & let simmer until water is absorbed.
  • Step #12 Remove pot from heat & serve as a side dish with rice or roti.
