Cherry Enchiladas Recipe

Ingredients
  • 1/2 c sugar .
  • 1/2 c butter .
  • 1 tsp almond extract .
  • 1 (21 oz) can cherry pie filling .
  • 1 tsp vanilla .
  • 1 3/4 c sugar .
  • 8-10 flour tortillas .
  • 1 c water .
  • vanilla ice cream

Directions
  • Step #1 With med heat, cook in skillet until sugar is dissolved, 1/2 c butter, 1 c water, 1 3/4 c sugar, 1 tea vanilla.
  • Step #2 Combine pie filling, 1 tea almond extract & 1/2 c sugar, mix well.
  • Step #3 Dip tortillas in liquid mixture soaking each.
  • Step #4 Fill tortillas with cherry mixture, roll up like an enchilada.
  • Step #5 Place in oblong pan & repeat.
  • Step #6 Pour remaining liquid mixture over rolled & filled tortillas.
  • Step #7 Sprinkle top with sugar & cinnamon.
  • Step #8 Bake 350* 45 mins.
  • Step #9 Serve with Ice Cream.
