Chocolate Eclair Recipe

Ingredients
  • 1 c confectioners' sugar
  • 1 (16 oz) container chocolate frosting
  • 1 (16 oz) package graham crackers
  • 1 (8 oz) container frozen whipped topping, thawed
  • 3 c milk
  • 2 (3.4 oz) packages instant vanilla pudding mix

Directions
  • Step #1 In a large bowl, mix pudding mix & confectioners' sugar.
  • Step #2 Whisk in milk until mixture is smooth, then slowly fold in whipped topping.
  • Step #3 Place a layer of graham crackers in the bottom of a 9x13 inch pan.
  • Step #4 Spread 1/3 of pudding mixture over crackers.
  • Step #5 Cover pudding with another layer of graham crackers.
  • Step #6 Continue layering until pudding mixture is gone.
  • Step #7 Cover last pudding layer with another layer of graham crackers.
  • Step #8 Remove lid & seal from frosting & microwave at 20 second intervals, stirring between intervals, until frosting is pourable (about 1 min).
  • Step #9 Spread frosting evenly over top layer of graham crackers.
  • Step #10 Refrigerate 24 hrs before serving.
