Coffee Bars Recipe

Ingredients
  • 1/4 c butter
  • 1/3 c evaporated milk
  • 1 1/2 c all-purpose flour
  • 1 1/2 tsps vanilla extract
  • 3 c confectioners' sugar
  • 1 c sliced almonds
  • 1/2 tsp ground cardamom
  • 1 c white sugar
  • 1 c confectioners' sugar
  • 2 tsps instant coffee granules
  • 1 tsp baking powder
  • 1 egg
  • 1/2 c milk
  • 1/4 tsp salt

Directions
  • Step #1 Combine flour, baking powder, cardamom, & salt; set these dry ingredients aside.
  • Step #2 Combine milk & instant coffee in saucepan, & heat at a medium low setting.
  • Step #3 Stir until coffee dissolves, & remove this from the heat.
  • Step #4 In a large bowl, cream the butter or margarine with the white sugar & 1 c confectioners' sugar.
  • Step #5 Beat in the egg, & then beat in the coffee mixture.
  • Step #6 Gradually mix in the mixture of dry ingredients, & fold in the almonds.
  • Step #7 Spread dough evenly in a 9 x 13 inch baking pan.
  • Step #8 Bake for 18-20 mins at 350 degrees F (175 degrees C), or until toothpick inserted in center comes out clean.
  • Step #9 Cool in pan on wire rack.
  • Step #10 To Make Frosting: Put 1 c of the confectioners' sugar in a mixing bowl.
  • Step #11 Beat in the evaporated milk & vanilla extract.
  • Step #12 Gradually beat in remaining 2 c of confectioners' sugar.
  • Step #13 Continue beating until of desired consistency.
  • Step #14 If consistency is too thick, add a little more milk; if it is too thin, add more powdered sugar.
  • Step #15 Frost the bars with the icing.
