Spanakorizo Recipe

Ingredients
  • 2 tbsps lemon juice .
  • 1 leek, sliced (white & light green part only) .
  • 1/4 c fresh parsley, sliced .
  • salt .
  • black pepper .
  • 1/4 c olive oil .
  • 3 c vegetable stock .
  • 2 garlic cloves, minced .
  • 1 bunch swiss chard .
  • 1 1/2 c arborio rice

Directions
  • Step #1 Heat the olive oil In a large-ish pan.
  • Step #2 Add the leek & garlic & cook, stirring, until the leek is soft.
  • Step #3 Add the rice & stir until the rice is coated in oil.
  • Step #4 Add the vegetable stock & let simmer, covered with a tight-fitting lid, over low heat/flame for 15 mins.
  • Step #5 Remove the pan from the heat & let this stand, covered, for 5 mins.
  • Step #6 While the rice is cooking, remove the Swiss chard leaves from their stalks; discard the stalks.
  • Step #7 Slice the leaves thinly & wash well.
  • Step #8 Place the Swiss chard in a separate pan & let simmer, until limp, covered, about 5 mins.
  • Step #9 Drain.
  • Step #10 Stir the Swiss chard, lemon juice & parsley into the rice.
  • Step #11 Add salt & pepper to taste.
