Ham, Corn & Cheddar Chowder Recipe

Ingredients
  • 1 c white onions, sliced (1/2 large onion) .
  • 4 c chicken broth (or 2 14.5 oz cans) .
  • 4 slices bacon, sliced .
  • 1/2 lb medium cheddar, grated (2 c) .
  • 2 c ham, sliced .
  • ground black pepper, to taste .
  • 3 tbsps flour .
  • 1 tbsp butter .
  • 1 c half-and-half cream .
  • 4 small potatoes .
  • 2 green onions, thinly sliced .
  • 1 (15 1/2 oz) can white corn

Directions
  • Step #1 Cook bacon In a large-ish heavy saucepan over moderate heat until crisp; remove bacon from pan & set aside.
  • Step #2 Add sliced onion to bacon fat in pan & cook, stirring until onion is softened.
  • Step #3 Add flour & stir this to mix.
  • Step #4 Stir in broth & bring to a boil.
  • Step #5 Add potato & let simmer, stirring every once in awhile, covered, until potatoes are just tender, about 8 to 10 mins.
  • Step #6 Stir in cream, corn & ham.
  • Step #7 Add cheddar, stirring just until cheese melts (do not let boil) & season generously with pepper.
  • Step #8 Serve bowls of cheddar topped with reserved bacon & sliced green onions.
