Cornbread Stuffed Quick Pork Chops Recipe

Ingredients
  • 2 tsps prepared mustard .
  • 1 egg, beaten .
  • 2 c crumbled cornbread .
  • 1/4 tsp chili powder .
  • Stuffing .
  • 1/4 c green peppers, sliced .
  • 1 tbsp pimiento .
  • 1/2 tsp salt .
  • 2 tbsps brown sugar .
  • 1/4 c butter .
  • Glaze .
  • 4 thick pork chops, 1-inch thick, with pocket cut out in each .
  • 1/4 c onions, sliced .
  • 1/8 tsp pepper .
  • 1/2 c ketchup

Directions
  • Step #1 NOTE: Most of the Prep time involves making the cornbread, cooking it & letting it cool.
  • Step #2 Make the cornbread & let cool.
  • Step #3 Cornbread Stuffing: In mixing bowl, green pepper, toss together the cornbread, onion, egg, pimiento, butter, salt & pepper.
  • Step #4 Take each chop & fill the pocket with the stuffing, dividing all of the stuffing amongst the chops.
  • Step #5 Arrange the pork chops in a 12 x 8 x 2inch dish, with the thickest meaty areas to the edge & the "tails" in the center.
  • Step #6 Brush half of the glaze (see recipe above) over the tops of the chops.
  • Step #7 Cover up with wax paper.
  • Step #8 Microwave at Medium (5) for 35-40 mins, rotating dish 1/2 turn after 15 mins, until tender.
  • Step #9 Let stand for 5 mins.
  • Step #10 Brush with remaining glaze before serving.
