Rustic Bread Stuffing Recipe

Ingredients
  • 1 c finely sliced green bell peppers .
  • 1/4 c olive oil .
  • 1 1/2 c finely sliced onions .
  • 1 3/4 c low sodium chicken broth, heated .
  • 1 lb country bread (1 crusty loaf) .
  • 1 large garlic clove, minced .
  • 1 1/2 c thinly sliced celery .
  • 1/3 c sliced fresh parsley .
  • 4 tsps sliced fresh thyme .
  • 6 tbsps butter

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Using long serrated knife, cut bottom crust & short ends off bread into 1" cubes (about 10 c,loosely packed).
  • Step #3 Place cubes in large bowl.
  • Step #4 Add oil, thyme, & garlic; toss to coat.
  • Step #5 Spread cubes out on a large rimmed baking sheet.
  • Step #6 Sprinkle top with salt & pepper.
  • Step #7 Bake until golden & slightly crunchy, stirring every once in awhile, about 20 mins.
  • Step #8 Return cubes to same large bowl.
  • Step #9 Melt butter in large skillet over medium-high heat.
  • Step #10 Add onion, celery, & bell pepper.
  • Step #11 Saute until vegetables are soft, about 10 mins, add parsley.
  • Step #12 Preheat oven to 375 degrees.
  • Step #13 Butter 11x7" glass baking dish.
  • Step #14 Stir vegetable mixture into bread cubes.
  • Step #15 Gradually add hot broth, tossing to coat evenly.
  • Step #16 Spice up stuffing to taste with salt & pepper & transfer to prepared dish.
  • Step #17 Cover up dish with buttered foil wrap, buttered side down.
  • Step #18 Bake stuffing until heated through, about 25 mins.
  • Step #19 Uncover & bake this until top is brown, about 25 mins longer, & serve.
