Olive Batter Bread Recipe

Ingredients
  • 1 (1/4 oz) package dry yeast .
  • 2 c flour, divided .
  • 1 tbsp white sugar .
  • 1 tsp oregano, dried .
  • 1/2 c feta cheese, crumbled .
  • 1/2 tsp salt .
  • 1/3 c kalamata olives, sliced .
  • 1 egg, beaten .
  • 1/2 c water .
  • 2 tbsps butter

Directions
  • Step #1 Spray a 1 quart casserole dish or round cake pan.
  • Step #2 Mix 1 c flour with the yeast & set aside.
  • Step #3 Heat the water, feta, sugar, butter, & oregano in a small saucepan until it is just warm (120 degrees) & the butter is almost melted.
  • Step #4 Pour this mixture into the flour.
  • Step #5 Add the egg.
  • Step #6 Using an electric mixer, beat on medium speed for 30 seconds or until everything is mixd.
  • Step #7 Then turn up the mixer to high speed & beat for 3 mins.
  • Step #8 Stir in the remaining 1 c flour & the olives with a spoon.
  • Step #9 The batter will be stiff.
  • Step #10 Pour the dough into the prepared pan & cover & let it rise in a warm place until it is doubled in size (about 1 hr).
  • Step #11 Heat the oven to 375 degrees.
  • Step #12 Bake the bread for 25 mins or until it is golden brown.
  • Step #13 Remove from the pan right away & allow it to cool.
