Bacon Risotto Recipe

Ingredients
  • 1/2 c smoked bacon, sliced .
  • 1/4 c sliced dried mushrooms, soaked in boiling water .
  • 1 tbsp butter .
  • 3 tbsps tomatoes, sliced & peeled .
  • 1 sprig fresh oregano or fresh thyme .
  • 5 c hot stock .
  • 2 tbsps sunflower oil (canola is also a good substitute) .
  • 1 large onion, sliced .
  • 1 1/2 c risotto rice .
  • salt & freshly ground black pepper .
  • 2 c mixed fresh mushrooms .
  • 1/4 c dry white wine .
  • 8 pieces black olives, stoned & quartered .
  • 1 garlic clove, crushed

Directions
  • Step #1 Heat teh oil In a large-ish, heavy-based pan with a lid.
  • Step #2 Gently cook the onion & bacon until the onion & bacon is tender & the bacon fat has run out.
  • Step #3 Stir in the rice & garlic & cook over a high heat for 2-3 mins, until the rice is well coated.
  • Step #4 Add the dried mushrooms & their liquid, the fresh mushrooms, half the stock, the oregano or thyme & seasoning.
  • Step #5 Bring to a boil, then reduce the heat to low.
  • Step #6 Cover up tightly & leave to cool.
  • Step #7 Check the liquid & if dry, add more liquid as required until the rice is cooked, but not mushy.
  • Step #8 Just before serving, stir in the the butter, white wine, tomatoes & olives & check the seasoning.
  • Step #9 Serve hot, garnished with thyme sprigs.
