Cod And Veggies Casserole Recipe

Ingredients
  • fresh parsley, rough sliced for garnish .
  • 1/2 tsp pepper, fresh ground .
  • 1 lb cod .
  • 1 medium tomato, fresh, sliced thick .
  • 1 tbsp red onions, sliced .
  • vegetable oil cooking spray .
  • 1/2 lb asparagus, fresh spears .
  • 1/4 green sweet pepper, sliced strips .
  • 1/4 red sweet pepper, sliced strips .
  • 1 tsp cajun seasoning (optional) .
  • 1/4 tsp salt .
  • 1 tbsp leeks, sliced (or green onion)

Directions
  • Step #1 Preheat oven to 375f degrees.
  • Step #2 Spray medium size casserole with veggie spray; sprinkle both sides of cod with half of the salt & pepper & place this in casserole.
  • Step #3 Place tomato slices on top of cod & sprinkle with peppers & onion.
  • Step #4 Sprinkle top cajun spice mix over if using.
  • Step #5 Top with asparagus spears; sprinkle sliced leek over; sprinkle with the other half of the salt & pepper; spray well with veggies spray.
  • Step #6 Cover up & bake on middle rack of oven for approximately 25 mins or until fish flakes easily with fork.
  • Step #7 Garnish with fresh parsley.
