Raspberry Mint Cairo Cooler Recipe

Ingredients
  • 1 c fresh mint (optional) .
  • lime wedges, to garnish (optional) .
  • 1 c frozen raspberries .
  • 2 1/2 c pineapple juice .
  • 3 oz frozen limeade concentrate, thawed .
  • 1 liter cold carbonated lemon-lime beverage

Directions
  • Step #1 Rub the mint leaves around the inside of a large iced tea jug or pitcher, then drop them into the glass.
  • Step #2 Pour in remaining ingredients & mix well.
  • Step #3 Serve with a lime wedge on the edge of the glass.
  • Step #4 Our troop leader Nashawn, also made this recipe using mint & raspberry extract to taste, & it got rave reviews.
  • Step #5 For an alcohol variation, add 1-2 shots (30-60ml) of dark rum to 16 oz of cooler.
  • Step #6 (No, The Girl scouts did not partake of this version!).
