Cheesy Clouds Recipe

Ingredients
  • 100 g grated cheddar cheese .
  • 1 tsp mustard .
  • 40 g butter .
  • 1 pinch cayenne pepper .
  • 3 eggs, separated .
  • 150 ml milk .
  • 1 tbsp grated parmesan cheese .
  • 25 g plain flour .
  • 150 g broccoli florets

Directions
  • Step #1 Heat oven to 190C(375F).
  • Step #2 Boil or steam broccoli until just tender.
  • Step #3 Grease four ramekin dishes with some of the butter & dust with the parmesan.
  • Step #4 Melt the remaining butter in a pan & add the flour & cook for 1 min.
  • Step #5 Add the milk & stir well until it is smooth & thick.
  • Step #6 Remove from heat & add the mustard, cayenne & cheese.
  • Step #7 Gradually beat in the egg yolks.
  • Step #8 Whisk the egg whites until they form soft peaks.
  • Step #9 Stir a little egg white into the cheese mix & then carefully fold in the rest.
  • Step #10 Divide the broccoli between the dishes & top this with the cheese mix.
  • Step #11 Bake for 15 mins.
  • Step #12 Great with cherry tomatoes & toast.
