Shortcut Cioppino Recipe

Ingredients
  • 1/3 c onions, sliced .
  • 1 (14 oz) can Italian-style sliced tomatoes .
  • 3 (7 1/2 oz) cans minced clams with juice .
  • 1/3 c green peppers, sliced .
  • 1/2 c dry white wine .
  • 8 oz raw shrimp, deveined & shells removed .
  • 2 tbsps olive oil .
  • 1 garlic clove, minced

Directions
  • Step #1 Heat the olive oil In a large-ish, heavy pot.
  • Step #2 Add the onion & peppers & saute until transparent, then add the garlic.
  • Step #3 While the vegetables are cooking, drain & reserve the clams, keeping the juice.
  • Step #4 Add the clam juice, the tomatoes & the wine to the pot.
  • Step #5 Bring the mixture to a gentle boil & then reduce the heat to a simmer.
  • Step #6 Cook the soup, covered, for 10 mins.
  • Step #7 At this point add the shrimp & reserved clams.
  • Step #8 Simmer, uncovered, for 4 to 5 mins.
  • Step #9 Taste & adjust seasonings.
  • Step #10 If desired, add a combination of salt, pepper, basil or oregano to taste.
  • Step #11 (Italian seasoning can be substituted also).
