Winter Squash Bisque Recipe

Ingredients
  • 3 (14 oz) cans chicken broth .
  • 6 medium acorn squash .
  • fresh thyme sprigs (optional) .
  • 3/4 tsp ground ginger .
  • 1/2 tsp ground cinnamon .
  • 1 1/2 c half-and-half or light cream .
  • 3/4 c sour cream (optional) .
  • 1/4 tsp pepper .
  • 3/4 tsp salt

Directions
  • Step #1 Halve squash & remove seeds.
  • Step #2 Place squash halves, cut sides down, on a baking dish.
  • Step #3 Bake in a 350 degree F oven for 30 mins.
  • Step #4 Turn cut sides up.
  • Step #5 Bake, covered, 20 to 25 mins or until squash is tender.
  • Step #6 Scoop squash pulp out of the peel using a spoon; discard peel.
  • Step #7 Place pulp in batches in a mixer container or food processor/blender bowl.
  • Step #8 Cover up & mix or process until squash is smooth, adding some of the chicken broth if the mixture is too thick.
  • Step #9 Stir together pureed squash & remaining chicken broth In a large-ish saucepan.
  • Step #10 Stir in ginger, pepper, salt, & cinnamon.
  • Step #11 Bring mixture to boiling.
  • Step #12 Reduce heat & stir in the half-and-half or light cream.
  • Step #13 Heat through, but do not boil.
  • Step #14 If desired, garnish each serving with sour cream & thyme sprigs.
