Ingredients
  • 1 (8 oz) can cream-style corn .
  • 1 c sour cream .
  • 1 (8 oz) can whole kernel corn, drained .
  • 1 1/2 c shredded mild cheddar cheese, divided .
  • 6 tbsps butter, melted .
  • 2 large eggs .
  • 1 (8 oz) package corn muffin mix

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Beat eggs in medium bowl.
  • Step #3 Add 1 c cheese, cream style corn, muffin mix, whole kernel corn, sour cream & melted butter; mix until thoroughly mixd.
  • Step #4 Pour mixture into greased 2-quart baking dish.
  • Step #5 Bake in oven 45 mins or until center is set.
  • Step #6 Top with remaining cheese; bake 2 mins more or until cheese is melted.
  • Step #7 For another option: Add 1 small can drained, sliced green chilies or sliced pimiento to batter before baking).
