Devil Curry Recipe

Ingredients
  • 1 tsp ground allspice
  • salt to taste
  • 1 tsp ground ginger
  • 25 chile peppers, sun-dried
  • 2 1/4 lbs skinless, boneless chicken breast meat - cut into bite-size pieces
  • 1 tbsp mustard seed
  • 2 c water
  • 2 1/4 lbs potatoes
  • 1 tbsp distilled white vinegar
  • 3 lemon grass
  • 3 tbsps vegetable oil
  • 6 red onions, sliced
  • 7 candlenuts
  • 1 shrimp paste
  • 2 tbsps water, or as needed
  • 1 tsp ground turmeric

Directions
  • Step #1 Heat oil in a large skillet over medium high heat.
  • Step #2 In a medium bowl mix the onions, ginger, turmeric, galangal, candlenuts, chile peppers, shrimp paste, lemon grass & mustard seed.
  • Step #3 Blend together with a little water to form a fine paste.
  • Step #4 Add to skillet & saute until fragrant & almost dry.
  • Step #5 Add 2 c water & bring all to a boil.
  • Step #6 Add chicken & potatoes.
  • Step #7 Reduce heat & let simmer about 20 mins, or until chicken is cooked (no longer pink inside) & curry is quite thick in consistency.
  • Step #8 Add salt to taste.
  • Step #9 Remove from heat & add vinegar.
  • Step #10 Mix well & serve.
  • Step #11 This dish is best served with steamed white rice, as it is full of flavor.
