Eggs Benadict Recipe

Ingredients
  • 1/2 c reduced-calorie mayonnaise .
  • 1 tbsp fresh lemon juice .
  • 2 oz Canadian bacon .
  • 4 large eggs .
  • 2 tbsps hot water .
  • 2 whole wheat English muffins

Directions
  • Step #1 In the top of a double boiler, mix hot water with mayonnaise, stirring frequently until heated through, about 7 mins.
  • Step #2 Add lemon juice.
  • Step #3 Remove double boiler from heat & set aside.
  • Step #4 Add 2 to 3 drops yellow food coloring, if desired.
  • Step #5 In a nonstick skillet, cook bacon until heated through, about 3 mins.
  • Step #6 Place one slice bacon on each muffin half.
  • Step #7 Meanwhile, prepare poached eggs by cracking each egg into one of four microwaveable bowls (be careful not to break the yolks).
  • Step #8 Cover up each with clear plastic wrap.
  • Step #9 Microwave 2 eggs at a time on HIGH until whites are cooked & yolk is firm, about 1 1/2 to 2 mins.
  • Step #10 Remove eggs with slotted spoon & place one each on muffin halves.
  • Step #11 Top each egg with 2 tbsps of sauce & serve as soon as possible.
