Double-ginger Gingersnaps Recipe

Ingredients
  • 2 1/2 c all-purpose flour .
  • 3/4 c unsalted butter, softened .
  • 1 large egg .
  • 1/4 c molasses .
  • 2 tsps ground cinnamon .
  • 2 tsps baking soda .
  • 1/2 tsp salt .
  • 2 tbsps grated fresh ginger .
  • 1/3 c granulated sugar .
  • 1 c packed dark brown sugar .
  • 2 tsps ground ginger

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Whisk flour, baking soda, ground cinnamon, ginger & salt.
  • Step #3 In another bowl, beat butter & brown sugar until well mixed.
  • Step #4 Add egg, molasses, & fresh ginger, until well mixd.
  • Step #5 Beat in flour mixture until mixed.
  • Step #6 Roll dough by rounded tbsps into balls.
  • Step #7 Roll balls in granulated sugar.
  • Step #8 Place 3 inches apart on ungreased baking sheets.
  • Step #9 Bake 10 to 12 mins, or until cookies flatten & crack.
  • Step #10 Cool on sheets 2 mins.
  • Step #11 Remove to wire rack; cool completely.
