Ingredients
  • 6 large carrots, cut into 1-1/2 inch pieces
  • 1/2 c milk
  • 1/2 tsp beef bouillon granules
  • 2 tbsps cornstarch
  • 1 (10 oz) package frozen peas, thawed
  • PEAS SOUP FOG:
  • 1 1/2 c milk
  • salt & pepper to taste
  • 2 cloves garlic, peeled
  • 1/2 c finely sliced onion
  • 4 large potatoes, peeled & quartered
  • 1/4 c butter or margarine
  • 1/4 tsp pepper
  • 1 lb ground beef
  • 1/2 tsp salt

Directions
  • Step #1 Place potatoes, carrots & garlic in a saucepan; cover with water.
  • Step #2 bring to a boil.
  • Step #3 Reduce heat; cover & cook for 20-25 mins or until vegetables are tender.
  • Step #4 Drain; reserving 1/2 c cooking liquid.
  • Step #5 In a mixing bowl, mash potatoes, carrots & garlic.
  • Step #6 Beat in milk, butter, salt & pepper until light & fluffy.
  • Step #7 Set aside & keep warm.
  • Step #8 Meanwhile, in a skillet, cook beef & onion over med-heat/flame until meat is no longer pink; drain.
  • Step #9 Add reserved cooking liquid.
  • Step #10 Combine cornstarch & milk until smooth; stir in theto meat mixture.
  • Step #11 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #12 Stir in peas, bouillon, salt & pepper.
  • Step #13 Cook for 2-3 mins or until heated through.
  • Step #14 Serve over mashed potatoes.
