Chicken & Corn Chowder Recipe

Ingredients
  • 1 1/2 c fresh corn kernels or frozen corn kernels .
  • 1 jalapeno pepper, seeded & minced .
  • 1/8 tsp salt .
  • 1/4 c celery, sliced .
  • 1/4 tsp ground red pepper .
  • 1 tsp fresh thyme (or 1/4 tsp dried) .
  • 2 tbsps whole grain wheat flour .
  • 2 tbsps butter .
  • 3 c 1% low-fat milk .
  • 1/4 c onions, sliced .
  • 2 c boneless skinless chicken, sliced .
  • 1 (14 3/4 oz) can creamed corn

Directions
  • Step #1 Melt butter In a large-ish Dutch oven over med-heat/flame.
  • Step #2 Add onion, celery, & jalapeño & cook about 3 mins or until tender.
  • Step #3 Add flour & cook for 1 min, stirring constantly.
  • Step #4 Stir in milk, red pepper, chicken, corn, thyme, salt & creamed corn.
  • Step #5 Bring to a boil then reduce heat to medium & cook for about 5 mins, stirring frequently.
