Step #1 Place oatmeal in food processor/blender & pulse until finely sliced.
Step #2 Remove to a bowl & set aside.
Step #3 Place macadamia nuts in food processor/blender & pulse until finely sliced but not stuck together.
Step #4 Add nuts to oatmeal & mix well.
Step #5 Add flour, & Parmesan to mixture, thyme, mix until mixd.
Step #6 Spice up with salt & pepper.
Step #7 Dip chicken breasts in butter, then dredge breasts in oatmeal mixture until breasts are well-coated.
Step #8 In large skillet heat canola oil over medium high heat.
Step #9 Add chicken in & fry, turning once until crispy & brown, about 4 mins on each side or just brown & bake in 350 degree oven for 10 to 12 mins.
