Spring Vegetable And Ham Risotto Recipe

Ingredients
  • 3 scallions, sliced .
  • 1/2 lb smoked ham, sliced .
  • saffron .
  • salt & pepper .
  • 2 shallots, sliced .
  • 2 1/2 c vegetable broth .
  • 2 tbsps butter .
  • 1/3 c finely grated parmesan cheese .
  • 1 c risotto rice .
  • 2 celery ribs, sliced .
  • 1/4 lb asparagus, cut into 1 1/2-inch pieces .
  • 1/4 lb French style green beans, halved .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Place the oil, butter & shallots in a heavy-bottomed pan & saute until softened.
  • Step #2 Stir in the rice & ham & cook for 4-5 mins.
  • Step #3 Meanwhile, pour the vegetable bouillon over the saffron & leave to soak.
  • Step #4 Strain over the rice & cook for 10 mins.
  • Step #5 Add the celery, beans & asparagus & let simmer for a further 15-20 mins until the rice is tender & all the liquid is absorbed.
  • Step #6 Stir in the scallions & cheese.
  • Step #7 Spice up to taste, cover & cook for 3 mins.
  • Step #8 Serve hot.
