Lime Curd Recipe

Ingredients
  • 2 c sugar .
  • 10-12 limes .
  • 5 eggs, beaten .
  • 1 c butter .
  • lime zest

Directions
  • Step #1 Beat eggs thoroughly.
  • Step #2 Strain through wire strainer, into a bowl, & set aside.
  • Step #3 Shred, very finely, 1/3 c zest from limes.
  • Step #4 Squeeze the juice from limes to make 1-2/3 c liquid.
  • Step #5 Put sugar & butter in upper part of double boiler, set over simmering water.
  • Step #6 Stir together until butter is melted.
  • Step #7 Add lime juice, zest, & eggs to butter mixture.
  • Step #8 Cook, stirring frequently until white foam is absorbed from the surface, & mixture thickens to consistency of a light custard (approx.
  • Step #9 15 mins).
  • Step #10 Spoon hot curd into warm jars, cool slightly, & seal with lid.
  • Step #11 Refrigerate.
  • Step #12 Share with friends.
