Ingredients
1 tsp ground allspice .
1 tbsp worcestershire sauce .
1 tbsp fresh coarse ground black pepper .
4-5 medium potatoes, peeled & sliced .
1 (12 oz) bottle Guinness stout .
2 tsps kosher salt .
1/4 tsp ground cinnamon .
4 garlic cloves, minced .
6 small carrots, peeled & sliced .
1 head cabbage, sliced .
1/2 lb celery, sliced .
2 bay leaves .
4 lbs corned beef brisket .
1 large onion, roughly sliced .
1/4 tsp ground cloves
Directions
Step #1 Rinse corned beef thoroughly in cold water.
Step #2 Throw away any spices or spice packet included with the meat.
Step #3 Trim excess fat but do leave some fat.
Step #4 Dry meat thoroughly.
Step #5 Spray bottom & sides of large dutch oven or pot with cooking spray.
Step #6 Brown corned beef on all sides over high heat until nicely golden brown.
Step #7 Remove from heat & pour Guinness over the meat.
Step #8 Add water until brisket is just covered.
Step #9 Add the onion, allspice, garlic, cinnamon, bay leaves, cloves, pepper to the pot.
Step #10 Return to stove & bring to boil.
Step #11 Reduce heat, cover pot & let simmer for 2 1/2 hrs.
Step #12 Add carrots, potatoes & celery.
Step #13 Return to simmer & cook, uncovered, for 15 mins.
Step #14 Add the cabbage & cook, uncovered, for another 15 mins.
Step #15 Remove the bay leaves.
Step #16 Remove the vegetables with a slotted spoon & place at one end of large serving casserole.
Step #17 Place in 200 degree (warm) oven.
Step #18 Remove the corned beef to a slicing surface & let sit for ten mins.
Step #19 After ten mins, slice it against the grain & place at opposite end of vegetables.
Step #20 Place back in warm oven.
Step #21 Add 1 tbsp Worcesershire sauce to cooking liquid & boil vigorously until reduced by half.
Step #22 Serve beef & vegetables with reduced cooking liquid & also Mustard Sauce for Corned Beef & Cabbage (Recipe #86657).
