My Sausage Stuffing Recipe

Ingredients
  • 1-2 apple, sliced .
  • 1 tsp black pepper .
  • 1 lb bulk sausage meat .
  • 2 tsps sage .
  • 2 tsps rosemary .
  • 1/4 c finely sliced fresh parsley .
  • 1/4 c port wine .
  • 2-4 garlic cloves, minced .
  • 2 medium onions, sliced .
  • salt, depends on how salty your stock is .
  • 2 c well seasoned chicken stock .
  • 10 slices very dry bread (I put it on a sheet pan in a 200F oven to dry it out) .
  • 2 tsps thyme .
  • 2 stalks celery, finely sliced

Directions
  • Step #1 Brown sausage meat in skillet until golden brown & and fat is rendered.
  • Step #2 Drain fat.
  • Step #3 Cube bread & place this in large bowl.
  • Step #4 Add sausage, pepper, apple, garlic , onion, celery, & herbs.
  • Step #5 Mix well.
  • Step #6 Moisten with chicken stock till it is quite moist but bread still retains its shape.
  • Step #7 mix well.
  • Step #8 Add port.
  • Step #9 Taste 1 bread cube for salt, adjust to your taste.
