Light Pineapple Mousse Recipe

Ingredients
  • 1 (11 g) packet sugar-free pineapple jelly crystals .
  • 200 g canned pineapple chunks, canned in natural juice .
  • 1/2 c light cream cheese .
  • 1/2 c evaporated low-fat milk .
  • 1/2 c reserved pineapple juice, from the canned pineapple .
  • 1/2 c water

Directions
  • Step #1 Refrigerate the evaporated milk to make it as cold as possible.
  • Step #2 Combine the juice, water & jelly crystals.
  • Step #3 Microwave for one min, stir & leave to cool.
  • Step #4 Pour the evaporated milk into a small mixing bowl & beat until very thick.
  • Step #5 Add the cream cheese & continu beating.
  • Step #6 Gradually add the jelly & continue to beat until the mixture is very thick.
  • Step #7 Fold in the pineapple pieces.
  • Step #8 Place the mousse into 4 individual serving dishes & put in the fridge for about an 1 1/2 or until set.
