Corn And Kielbasa Chowder Recipe

Ingredients
  • 16 oz frozen corn, thawed .
  • 2 onions, finely sliced .
  • 1 c half-and-half .
  • 12 oz baking potatoes, peeled & cut into 1/2-inch cubes .
  • 1 tbsp butter .
  • 8 oz kielbasa, halved lengthwise & thinly sliced .
  • salt & pepper .
  • 14 1/2 oz chicken broth

Directions
  • Step #1 Heat a deep skillet or a wide 4- to 6-quart pot over medium-high heat.
  • Step #2 Add the kielbasa & cook, until lightly browned, stirring, about 6 mins.
  • Step #3 Transfer to a plate.
  • Step #4 Add the onions & butter to the pan & cook over med-heat/flame, until golden, stirring every once in awhile, about 6 mins.
  • Step #5 Add the broth & potato & bring to a boil.
  • Step #6 Reduce the heat, cover with a lid & let simmer until the potato is tender, about 10 mins.
  • Step #7 Add the half-and-half & corn & cook, stirring, until heated through.
  • Step #8 Using a mixer or food processor/blender, puree 1 c chowder until smooth.
  • Step #9 Stir the puree back into the chowder along with the browned kielbasa & season to taste with salt & pepper.
