Cornmeal Pie Recipe

Ingredients
  • 1 1/2 c sugar
  • 1 c butter (no substitutes), softened
  • 1 tsp vanilla extract
  • 2 (9 inch) unbaked pastry shells
  • 3 eggs
  • 1/2 c milk
  • 1 1/2 c light corn syrup
  • 1/2 c cornmeal
  • Whipped cream
  • 3 tbsps all-purpose flour

Directions
  • Step #1 In a large mixing bowl, cream the butter & sugar.
  • Step #2 Beat in eggs one at a time.
  • Step #3 Add corn syrup, milk & vanilla; mix well.
  • Step #4 Fold in cornmeal & flour.
  • Step #5 Pour into pastry shells.
  • Step #6 Bake at 350 degrees F for 25 mins.
  • Step #7 Reduce heat to 300F degrees F; bake 20-25 mins longer or until pies test done.
  • Step #8 Cool.
  • Step #9 Garnish with whipped cream if desired.
